Quick answers

How do I know shrimp is cooked?

Shrimp is done when it turns pink and opaque and curls into a loose C shape, usually 2 to 3 minutes per side. A tight O means overcooked.

Raw or precooked shrimp?

Raw shrimp gives the best texture. Precooked shrimp only needs to be warmed, about a minute, or it turns rubbery.

How do I thaw frozen shrimp quickly?

Put it in a colander under cold running water, or in a bowl of cold water for about 10 minutes.
