Salmon and rice is a healthy dinner that comes together fast. These six use simple ingredients and most are ready in 20 to 30 minutes.
1. Teriyaki salmon bowls
Time: 25 min · Also need: soy sauce, brown sugar, garlic, cucumber or broccoli
A sweet and savory glaze that even picky eaters like.
Cook 1 cup rice.
Simmer ¼ cup soy sauce, 2 tbsp brown sugar, 1 garlic clove and ¼ cup water until slightly thick.
Bake 4 salmon fillets at 400°F for 12 to 15 minutes, brushing with the glaze halfway. Serve over rice with vegetables.
Frozen salmon works. Thaw it overnight in the fridge.
2. Honey garlic salmon
Time: 20 min · Also need: honey, garlic, soy sauce, butter
Sticky, glossy and done in 20 minutes.
Cook rice. Season 4 fillets with salt and pepper.
Sear skin side up in a hot oiled skillet 4 minutes, flip and cook 3 to 4 minutes more.
Add 1 tbsp butter, 3 garlic cloves, 3 tbsp honey and 1 tbsp soy sauce. Spoon the sauce over the salmon and serve with rice.
Lower the heat once the honey goes in so it does not burn.
3. Salmon fried rice
Time: 20 min · Also need: eggs, frozen peas and carrots, soy sauce
A great way to use leftover salmon.
Scramble 2 eggs in a skillet and set aside.
Stir-fry 1 cup frozen peas and carrots, then add 3 cups cold cooked rice and 2 tbsp soy sauce.
Fold in 1½ cups flaked cooked salmon and the eggs. Heat through.
A drizzle of sesame oil at the end adds lots of flavor.
4. Sheet pan lemon salmon and rice
Time: 30 min · Also need: lemon, asparagus or green beans, butter, garlic
Easy enough for a weeknight, nice enough for company.
Cook rice.
Arrange 4 fillets and asparagus or green beans on a sheet pan. Drizzle with melted butter, garlic, salt and lemon slices.
Bake at 400°F for 12 to 15 minutes until the salmon flakes easily.
Thicker fillets need a few more minutes.
5. Salmon sushi bake
Time: 30 min · Also need: mayo, sriracha (optional), seaweed snacks, cucumber
A fun, scoopable twist on sushi with no rolling and no raw fish.
Cook 2 cups sushi or short-grain rice and season with a little rice vinegar and sugar.
Mix 2 cups flaked cooked salmon with ¼ cup mayo and a little sriracha if you like.
Spread the rice in a baking dish, top with the salmon and bake at 400°F for 10 minutes. Scoop onto seaweed snacks with cucumber.
Kids love building their own little bites.
6. Cajun salmon with dirty rice
Time: 30 min · Also need: Cajun seasoning, onion, bell pepper, broth
Bold Southern flavors, ready in half an hour.
Cook 1 cup rice in broth with a diced onion, a diced pepper and 1 tsp Cajun seasoning.
Rub 4 fillets with 1 tbsp Cajun seasoning and sear 4 minutes a side until 145°F.
Serve the salmon over the rice.

What temperature should fish be cooked to?
The USDA recommends 145°F (63°C). The fish should be opaque and flake easily with a fork.
Skin on or off?
Cook it skin on for a crispy bottom and less sticking. It slides right off after cooking.
Can I use frozen salmon?
Yes. Thaw it overnight in the fridge, or seal it in a bag in cold water for about an hour.
